Being Christ’s Hands and Spinach Alfredo Lasagna Recipe

I have been the recipient of many acts of kindness. The body of Christ has ministered to me in more ways than I can count. When I was expecting a child dear friends took me shopping for brand new clothes, others cleaned my bathroom, and one got down on her knees and gave me a home pedicure. When I was caring for a newborn, the members of Jesus’ precious church dropped off delicious casseroles, gifted soft handmade blankets and cuddled the welcomed infant. In times of financial need, distress, or grief we have experienced hugs, discreet monetary gifts, visits, gifts of garden vegetables and hand-me-down clothing.

In Philippians 4:10-20, Paul thanks the Philippian church for their part in his ministry. They ministered to him in a spiritual way by meeting his physical needs. Today I’m sharing a recipe that my pastor’s wife gave me after she made this for our family when my first child was born. It has become my go-to recipe when I wanted to give someone a meal.

Spinach Alfredo Lasagna

1 box lasagna noodles
1 lb bulk pork sausage (or use spicy)
1 package frozen chopped spinach, thawed and well drained
1 jar (450 ml) pre-made Alfredo sauce
1/2 tsp salt
1/4 tsp pepper
1 egg
2 cups shredded cheddar cheese
1 container (450 ml) ricotta cheese (or cottage cheese works too)
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
2 tsp Herbes de Provence herb mix (or substitute Italian Seasoning herb mix)

Soak the noodles in hot water for 15 minutes. Meanwhile, in a skillet, brown the sausage. Drain noodles; set aside. Drain sausage; add spinach, Alfredo sauce, salt and pepper. In a bowl, combine the egg and cheddar, ricotta and Parmesan cheeses; mix well. In an ungreased 13-in. by 9-in. baking dish, layer a third of the sausage mixture, noodles and cheese mixture. Repeat layers twice. Sprinkle with mozzarella cheese and Herbes de Provence. Cover and bake at 350° for 45 minutes. Let stand for 15 minutes before cutting. Yield: 8-10 servings. Freezes well before or after cooking.
